Growing Fresh Herbs Indoors This January
January might feel quiet in the garden, but that doesn’t mean the growing has to stop. Bringing herbs indoors is a simple way to keep your hands in the soil and add a little freshness to your kitchen all winter long. Here in the Pacific Northwest, where winters can be gray and damp, a sunny windowsill and a few well-chosen herbs can go a long way. At

1. Start with the Right Light
Herbs need plenty of light to thrive indoors, especially during shorter winter days. A south- or west-facing window is ideal, giving your plants the brightest natural light available. If your space is a bit darker (which is common in NW Oregon winters), a small grow light can make all the difference. Even a few extra hours of light each day will help keep your herbs healthy and productive.
When choosing a grow light, look for one labeled “full spectrum,” which mimics natural sunlight and supports healthy plant growth. You don’t need anything too complicated—simple LED grow lights work well and are easy to set up over a countertop or shelf. Placing the light close to your plants and keeping it on for about 10–12 hours a day can really help your herbs thrive through the darker months.
2. Don’t Overwater
Indoor herbs prefer soil that’s slightly moist but never soggy. Let the top inch of soil dry out between waterings, and make sure your pots have good drainage. Overwatering is one of the most common mistakes this time of year, especially when plants aren’t growing as quickly. A simple check with your finger before watering can go a long way in keeping roots happy.
3. Choose Herbs That Thrive Indoors
Some herbs handle indoor growing better than others, especially during the darker winter months in zones 7–8. Great choices include
basil,
parsley,
chives,
mint, and
thyme—all of which adapt well to containers and indoor conditions. Rosemary and oregano can also do well with enough light and good airflow. Starting with these reliable varieties makes the whole process easier and more rewarding.
4. Harvest Regularly
The more you use your herbs, the better they’ll grow. Regular harvesting encourages new growth and helps keep plants full and bushy instead of leggy. Snip what you need for cooking, but avoid taking more than a third of the plant at once. It’s a simple habit that keeps your herbs productive and your meals a little more flavorful.
